THE WHY BEHIND THIS RECIPE
I freaking love tator tots. I think they are better than french fries - I said it. However, usually they are fried in seed oils and they send my blood sugar soaring. I originally created this for the Superbowl because I wanted a grain-free, whole food cheesy snack for game day that didn’t spike my blood sugar.
They are so easy and delicious I recommend making a double batch. The photo is SO BAD because everytime I make these they get eaten up so fast I forget to take a photo. I’ll upload a better one soon…
Serve with some Primal Kitchen unsweetened organic ketchup and ENJOY!

WHAT YOU NEED
4 cups cauliflower florets, chopped into florets (about 1 large cauliflower)
Alternatively you can use 4 cups of frozen cauliflower rice
1 large egg, lightly beaten
1/3 cup nutritional yeast
3/4 cup grass fed sharp cheddar, shredded
1/3 cup coconut flour
1/4 cup arrowroot starch
3 tbsp chives, finely diced
2 tsp kosher salt
1 tsp freshly ground black pepper
Serve with Primal Kitchen ketchup
HOW TO DO IT
PREHEAT OVEN AND PREPARE CAULIFLOWER
1. Preheat oven to 400°. Grease a large baking sheet with avocado spray. You want to go heavy on the avocado oil spray, here so they don’t get stuck to the pan!
2. Bring about an inch of water to boil in a medium sauce pan. Steam cauliflower florets until they are soft and you can pinch them with a fork, about 5 minutes.
3. In a food processor, pulse cauliflower until very well riced and almost smooth. Let cool slightly while you prepare the other ingredients.
COMBINE EVERYTHING
4. In a large bowl, add the egg, nutritional yeast, cheddar, coconut flour, arrowroot starch, chives, salt and pepper and mix until well combined.
5. Place riced cauliflower on a clean kitchen towel or in a nut milk bag and squeeze to drain water. This is very important otherwise your tots will be soggy and sad!
6. Add riced cauliflower to the large bowl. Stir to combine.
BAKE AND DEVOUR
7. Spoon about 1 tablespoon mixture and roll it into a tater-tot shape with your hands. Place on prepared baking sheet and bake for 12 minutes. Then flip the tots so the other side can get crispy. Bake for another 10-12 minutes. Then take them out and let them cool for a minute or two before DIVING IN!!!! Serve with Primal Kitchen ketchup.
SWAPS, TIPS & TRICKS
TIPS:
Use cauliflower rice if you don’t have a whole cauliflower
If you don’t have almond flour on hand, you can blend organic unroasted almonds in your Vitamix and BOOM you’ve got almond flour!
