Savory Rosemary Nuts

THE WHY BEHIND THIS RECIPE

These nuts spruce up any appetizer board, and they are incredibly delightful warm! You can also make them in advance and warm them up quickly in the oven (see recipe notes) before serving. Oftentimes spiced nuts are packed with brown sugar or cane sugar, but not these! A little egg white helps them stick together, and they are sweetened with either maple syrup or allulose. These also make great a great hostess gift - put them in a cute mason jar and tie with a ribbon and ta-da!

WHAT YOU NEED

INGREDIENTS

  • 3 1/2 cups of nuts - I like a combo of

    • hazelnuts

    • pecans

    • walnuts

    • brazil nuts

    • cashews

    • almonds

  • 2 tbsp melted butter, or olive oil, avocado oil, coconut oil or ghee

  • 1 egg white

  • 4 tbsp coarsely chopped fresh rosemary

  • 1 tbsp maple syrup or 2 tbsp allulose

  • 1 tsp cayenne pepper (1/2 if you are spice sensitive)

  • 1 tsp cinnamon

  • 1 tsp kosher salt

HOW TO DO IT

  1. Preheat the oven to 350 degrees F.

  2. In a large bowl, beat egg white together until frothy. Then add melted butter, maple syrup or allulose, cayenne pepper, cinnamon and kosher salt and half of the chopped fresh rosemary.

  3. Add the nuts and toss to coat.

  4. Spread nuts out evenly onto a baking sheet.

  5. Bake until golden, about 10-15 minutes, stirring halfway through.

  6. When the nuts are done, toss them (you can use the same bowl) with the rest of the rosemary and another pinch of kosher salt (if needed, taste test first!)

  7. Serve warm or cool.

SWAPS, TIPS & TRICKS

  • Monitor your nuts: If your oven runs hot, be sure to check the nuts a bit early. Nuts can go from wonderfully golden to bitter and acrid if overcooked!

  • Egg white: If you are vegan leave out the egg white and add another 1 tbsp oil of choice.

  • Make in advance: Make them in advance and then just reheat in the oven - 10 minutes at 300 degrees F and add a dash more olive oil on top before serving.
