Cherry Date Coconut Creme Popsicles

These cherry coconut popsicles were summer in frozen form! Mariah’s recipe is as easy as it gets: just blend, pour, and freeze. No refined sugar and only a handful of wholesome ingredients. The pop of fresh cherries against rich coconut was an amazing combo.

Total time: 15 minutes + 4 hour freeze time

WHAT YOU NEED

Makes 4-6 popsicles

INGREDIENTS

  • 12oz coconut milk (full-fat preferred)

  • 2 scoops Cocoyo Vanilla coconut yogurt or any coconut yogurt of choice

  • 5 dates

  • 2 tbsp coconut shreds

  • Handful of cherries

HOW TO DO IT

  1. Blend your dates, coconut milk, yogurt, and coconut shreds together til they reach a creamy consistency. Some texture from the coconut shreds is okay.

  2. Pit your cherries and cut them in slices.

  3. In popsicle molds, pour your blended mixture. Gently add cherry slices to the mixture, keeping them afloat just enough to see them.

  4. Freeze for at least 4 hours or until solid. Enjoy!
