Citrus and Cabbage Slaw

THE WHY BEHIND THIS RECIPE
Slaws usually are filled with refined, industrial seed oils, but NOT THIS ONE! This uses Primal Kitchen Avocado Mayo and the juices from the citrus. I love prepping a slaw because it keeps well (dare I say it GETS BETTER) in the fridge for the week. This is a recipe by Ali Layfayette that we made together! From Ali I learned how to supreme a fruit, so there is no rind, pith or mess. You can easily turn this slaw into a main event by adding some rotisserie chicken, pulled pork, or tofu for protein, and an avocado for some healthy fats.
How to supreme:
Start with a very sharp knife. Trim the fruit's ends off, make sure that you trim enough to see the edges of the fruit segments. Set the fruit on a flat side on a cutting board. Slice off the peel and pith in sections, following the shape of the sphere. Set the fruit on its side. Cut toward the center, along a membrane. Then slice along the adjacent membrane until the cuts meet, releasing the segment. Transfer the segment to a bowl. Repeat. If using juice from the fruit, squeeze remaining membranes to get all that delicious juice! Now I thought this was crazy but after doing it, the results really are worth it!
Yields: 6-8 servings

WHAT YOU NEED
1/2 green cabbage, thinly sliced
1/2 red cabbage, thinly sliced
2 carrots, shredded or grated
1/2 red onion, thinly sliced
2 oro blanco or pink grapefruits
2 cara cara oranges
1 tbsp Primal Kitchen mayo
1 tsp honey or agave
1 tbsp olive oil
kosher salt to taste
1 tbsp chopped cilantro
HOW TO DO IT
Mix red and green cabbages, shredded carrots, and onion in a medium bowl. Add a pinch of salt and mix to coat the veggies.
Let it sit while you segment or supreme only one each of the grapefruit and oranges. Supreming is a technique that removes the membrane from citrus fruit so it can be served in slices. This is a little more time-consuming, but the results—no rind, no pith, no mess—are worth it.

Mix supremes into the cabbage and carrot mixture.
In a small bowl, combine the mayo, juice from the remaining grapefruit and orange as well as any juice left from the supremes, honey or agave, and oil. Whisk to combine.
Mix dressing into cabbage mixture, toss to combine. Add in chopped cilantro and mix thoroughly. Chill until ready to serve.
